No-Bake Dark Chocolate Mousse Tarts : gluten free, grain free and vegan

Before i came back to Honduras i made Dan a huge valentines day chocolate cake since we weren´t going to spend it together. We had dinner and i served him a piece of his cake, he went back for seconds and thirds until i told him it was a vegan cake. He couldn´t believe it! Got to thank Pureella for her recipe. It was delightful (according to him, im still juicing). If you are looking for a healthy alternative to celebrate valentines this will not disappoint. Hope you enjoy it as much as Dan did!

Ingredients :

Crust
– 1 cup almonds
– 1/2 cup macadamia nuts
– 1 cup medjool dates, pitted
– 1/2 cup coconut flakes + extra for topping
– coconut oil for greasing

Filling:
1 1/2 cup silken tofu (I used organic sprouted silken tofu)
– 3/4 cup dark 72% good quality chocolate squares (about 200g)
– 3 tablespoons coconut oil
– himalayan pink salt
– 1 tsp vanilla extract
– 1/4 cup organic agave nectar or raw honey (if not vegan)
– 1 tbsp of amaretto liqueur

You will also need : tart shells, about 4″D with removable bases are best, food processor, double boiler or a bowl with small pot to melt some chocolate.

Directions :

For the crust:
– Soak the nuts for about 2-4 hours or longer even overnight in the refrigerator. Once they are soaked, rinse and drain them thoroughly. Place in a food processor and grind them up on high to a meal texture.
– Add the dates and the coconut flakes and continue processing until a paste forms. Turn off the food processor and check with your fingers if the mixture sticks when you press it between your fingers. If it falls apart, add one tablespoon of warm water at a time and continue checking for the right ‘slightly sticky’ texture.
– Grease the tart shells with some coconut oil. How many you make depends on the size of your tart shells. I used a 9inch tart mold. Fill the tart mold with the base mixture being sure to press the bottom evenly and bringing up the mixture up to the sides. Set aside.

For the filling :
Start by setting up a double boiler or a dish over a small pot with water to melt the chocolate. (be sure the dish does not touch the water in the pot). Add the chocolate pieces and coconut oil  and slowly allow to melt, stirring gently to incorporate the ingredients well. Once all melted, turn the heat off and keep in the bowl to stay warm and soft.
– Simply rinse and wipe the food processor from the base mixture and set it in place for the filling ingredients. Place the silken tofu, vanilla extract and agave or honey and pinch of salt into the food processor and mix on medium to blend together well. You may need to turn off the processor and scrape down the sides to make sure everything gets incorporated. Now you’re going to incorporate the melted chocolate. This has to be done very slowly as you never want to mix cold and hot ingredients too quick – the temperatures need to be blended in slowly. So, scoop a tablespoon of the melted chocolate into the mixer, close and blend on low, turn off and scoop in another tablespoon…. continue adding in the chocolate one tablespoon at a time until all in incorporated. Towards the end, be sure to scrape the sides down to get all the goodies combined.
– Scoop the filling into the tart mold and distribute evenly over the tops.
Place in the freezer to set for about 2 hours.

Last Day of Detox!!

Today is my last day of detox! For all you people that want to start a juice cleanse I encourage you to try it, at least 3 days or just substitute your breakfast or dinner for 1 green smoothie.You wont regret it.
We woke up pretty late today because we stayed up last night watching Pablo Escobar: Patron del Mal (Pablo Escobar: Boss of evil). WE.ARE.HOOKED. Its basically the life of Pablo Escobar from childhood to this death. Brutal stuff. And I cant help but to notice the eerie similarities that this (a story almost 30 years ago) resembles the one my country is living now. Sigh!
On to happier thoughts. So we woke up late, we ran to the Rose Bowl and back (about 4mi) and came home to make a delicious fresh mango and carrot juice blended with orange, pineapple, and just a hint of lime juice. It’s incredibly refreshing and makes a perfect post workout snack.
I still haven´t had lunch yet, but I´m sure i´ll have the second serving of the mango-carrot juice. Busy planning 2014 projects, will share with you once they´re rolling. Enjoy!

– Juice carrot, oranges and lime

Hoy es mi último día de desintoxicación! Para todas las personas que quieren iniciar una limpieza de jugo los animo a que traten por lo menos 3 días o simplemente sustituir el desayuno o la cena con un jugo. No se arrepentirán!

Nos despertamos muy tarde hoy porque trasnochamos viendo Pablo Escobar : Patrón del Mal . Estamos enviciados! Es básicamente la vida de Pablo Escobar desde su infancia a la muerte. Cosas Brutal. No puedo dejar de notar las similitudes inquietantes que esta ( una historia de hace casi 30 años ) se asemeja a la realidad de mi país. Desde sus gobernantes incompetentes a una policía corrupta a un país entero viviendo en miedo porque quien manda es el narcotráfico. Esperemos que hayamos tocado fondo y que el nuevo gobierno nos de esperanzas.

Ahora a pensamientos más felices. Así que nos levantamos tarde , corrimos de la casa al Rose Bowl  (alrededor de 4millas) y regresamos a tomar un  delicioso jugo fresco de mango y zanahoria mezclado con naranja, piña y un toque de limón. Es increíblemente refrescante y hace un perfecto aperitivo después de cualquier entrenamiento .
No he almorzado todavía, pero estoy segura de que me tomare la segunda porción de jugo que sobro. Buen provecho!

Ingredientes

– 4 zanahorias
– 2 naranjas
– 3/4 taza de mango
– 3/4 taza de piñá
– Jugo of 1/2 limon

Instrucciones

– Limpiar bien los ingredientes
– Sacarle jugo a la zanahoria y naranja con el exprimidor
– En una licuadora mezclar el jugo de naranja, zanahoria y limon con el mango y la piña
– Verter sobre hielo

No-Bake Blueberry Cheesecake

Im very excited about 2014! We are hosting a New Years Eve dinner and i´m doing all the cooking. I have my brazilian pork leg marinating, i just finished this delicious no bake blueberry cheesecake (recipe from my mother) and tomorrow i will make rosemary roasted potatoes and some brussels sprouts to share with you.  Hope you all have a happy New Year and as always, enjoy!nobakecheesecake

INGREDIENTS

Crust:

2 cups graham cracker crumbs
3 tablespoons melted butter
2 tablespoons brown sugar

Filling
12 oz mascarpone, softened.
4 oz cream cheese
1/3 cup granulated sugar
juice of 1/2 a lemon
1 tablespoon vanilla extract
1 1/2 cup heavy whipping cream

Sauce
2 cups fresh or frozen blueberries
1/2 cup water
juice of 1 lemon
1/2 cup plus 2 tablespoons white sugar
3 tablespoons corn starch dissolved in 1/4 cup water.
1 tablespoons lemon zest

INSTRUCTIONS

For the Cheesecake:
– Combine graham cracker crumbs, brown sugar and melted butter together in a bowl and mix. Press into the bottom and sides of a 6 or 7 inch spring form pan.
– In the bowl, whisk together the mascarpone, cream cheese, sugar, vanilla and lemon juice until smooth and creamy.
– In a separate bowl, beat the whipping cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
– Transfer the filling into the prepared crust, using a spatula to gently smooth the top.
– Cover with plastic wrap and chill for several hours or overnight.

For the sauce:

– In a small saucepan combine the blueberries, sugar, lemon juice, and water. Cook over medium-high heat, stirring gently until boiling.
– Add the cornstarch/water mixture and without breaking the berries- carefully stir it in. Cook for 2-3 minutes over low heat, stirring until sauce is thick. Fold in lemon zest.

Estoy muy emocionada por el 2014! Estamos organizando una cena de Fin de Año y yo estoy cocinando todo. Tengo marinando mi Piern de Cerdo, acabo de terminar este delicioso pastel de queso sin hornear de arándanos (receta de mi mama) y mañana voy a hacer papas asadas con romero y algunas coles de Bruselas para compartir con ustedes. Espero que todos tienen un feliz año nuevo y como siempre, disfruten!

INGREDIENTES

corteza:
– 2 tazas de migajas de galletas
– 3 cucharadas de mantequilla derretida
– 2 cucharadas de azúcar morena

relleno:
– 12 oz queso mascarpone
– 4oz de Queso crema
– 1/3 taza de azúcar granulada
– jugo de 1 /2 limón
– 1 cucharada de extracto de vainilla
– 1 1/ 2 taza de crema de leche

salsa:
– 2 tazas de arándanos frescos o congelados (pueden usar fresas o moras)
– 1/2 taza de agua
– jugo de 1 limón
– 1/2 taza más 2 cucharadas de azúcar blanco
– 3 cucharadas de maicena diluida en 1/4 taza de agua.
– 1 cucharada de ralladura de limón

INSTRUCCIONES

Para el pastel de queso :
– Combinar las migas de galletas graham , el azúcar morena y la mantequilla derretida en un bowl y mezclar. Precionen la mezcla con los dedos en el molde que usaran. Yo use un 6×6 cuadrado.
– En otro bowl , mezcle el mascarpone , queso crema, el azúcar , la vainilla y el limón hasta que esté suave y cremoso.
– En un bol aparte, batir la crema de leche hasta que se forme un piquito .
– Doble suavemente la crema batida en la mezcla de mascarpone .
– Transferir el relleno en la corteza preparada , usando una espátula para alisar suavemente la parte superior.
– Cubra con papel plástico y refrigere por varias horas o toda la noche .

Para la salsa:
– En una olla pequeña combine los arándanos , el azúcar, el jugo de limón y agua. Cocine a fuego medio-alto , revolviendo suavemente hasta que hierva.
– Agregue la mezcla de maicena diluida en agua y sin reventar los arandonos revuelva suavemente. Cocine durante 2-3 minutos a fuego lento , revolviendo hasta que la salsa esté espesa.
– Agregar  la ralladura de limón  y listo.

Chocolate Cake Smoothie

For my boyfriends birthday I got him this really delicious peanut butter and chocolate “Mad Men” inspired cake from Bittersweet Treats in Pasadena. Dan is obsessed with chocolate-banana smoothies in the morning so i try to wake early to make his smoothie. I woke up to make his smoothie and found out he had no chocolate or chocolate almond milk (we drink soy or almond milk) and the only chocolate thing we had in the fridge was our yummy chocolate cake. So there i was, with like the most fantastic chocolate cake smoothie EVER! Go ahead and try it, i´m sure everyone will love it!

Chocolate Cake Smoothie

INGREDIENTS:
– 1 slice of chocolate cake
– 1 cup of almond milk
– ice
– 1 tsp of vanilla

INSTRUCTIONS:

– In a blender, mix all the ingredients
– Decorate with chocolate chips or shavings

Honey Ginger Cake / Pastel de Miel y Jengibre

For Christmas i wanted to give something to my neighbors before we left on vacation for the holidays. I started thinking and Dan suggested I should bake them a ginger cake. I´ve baked this a few times and each time it was a revelation. I thought it was a great idea and went to the supermarket to get the stuff i needed.

If you are bored with traditional gingerbread for Christmas, this is a fantastic replacement. Aromatic , spicy, honey , soft, moist …I can go on and on  about how great this cake is. I wrapped and gave it to them and on the same day i got soooo many compliments and one of my neighbors said it was the best cake she has ever had. Wuhoo!

Anyhow… here is my recipe, enjoy!honeyginger

INGREDIENTS:
– 500 g of flour
– 3 teaspoons of baking powder
– 3 teaspoons of baking soda
– 150 g of brown sugar
– 1 tsp gingerbread spice
– 500 g golden syrup or honey
– 250g butter
– 300 ml of milk (i used coconut milk)
– 2 eggsINSTRUCTIONS:
-Preheat the oven to 355 degrees F. Oil your baking pan (I used one 10 inches round pan) and cover with parchment paper on top.

– In a large bowl, mix all dry ingredients and in a small saucepan pour honey and butter and heat until combined.- Break the eggs into a bowl and beat lightly. Add some milk to the honey mixture and mix together until the ingrediens are fully combined. Set aside to cool.

– When the honey mixture is warm, combine all the ingredients to make a dough.
– Pour the dough into the baking pan and bake for about 1 h 15 min.
You can sprinkle powdered sugar with cinnamon and voila!

En esta navidad que quería darle algo a mis vecinos antes irnos de vacaciones por las fiestas. Me puse a pensar y Dan me sugirió que debería hornear un pastel de jengibre. He horneado esto unas cuantas veces y cada vez fue maravilloso. Era una gran idea y fui al supermercado a conseguir las cosas que me hacían falta.

Si están aburridos del pastel de fruta cristalizada (yo lo odio) o del tradicional pastel de jengibre les aseguro que con este pastel quedaran cachetones con sus familiares. Es aromático, picante, dulce, y esponjoso… puedo seguir y seguir sobre lo sabroso que es este pastel. Envolví las tortas, los entregue y para mi sorpresa el mismo día el pastel (y yo) tuvo tantos elogios ; hasta uno de mis vecinos dijeron que era la mejor tarta que jamás haya tenido. Wuhoo! De todos modos … aquí está mi receta, buen provecho!


INGREDIENTES:
– 500 g de harina
– 3 cucharaditas de polvo de hornear
– 3 cucharaditas de bicarbonato de sodio
– 150 g de azúcar moreno
– 1 cucharadita de jengibre especias
– 500 g de miel de caña o miel
– Mantequilla 250g
– 300 ml de leche (yo usé leche de coco)
– 2 huevos

INSTRUCCIONES:

-Precalentar el horno a 355 grados F. Engrasar su molde para hornear (yo usé uno de 10 pulgadas redondo) y cubrir con papel pergamino en la parte superior.
– En un bowl grande, mezclen todos los ingredientes secos y en una cacerola pequeña viertan la miel y la mantequilla amarilla y calentar hasta que se mezclen.
– Quebrar los huevos en un bowl y batir ligeramente. Añadir un poco de leche a la miel y mezclar hasta que los ingrediens están completamente combinados. Dejar enfriar.
– Cuando la mezcla de miel este tibia, combine todos los ingredientes para hacer una masa.
– Vierta la masa en el molde y hornear durante aproximadamente 1 h 15 min.

Se puede espolvorear con azúcar en polvo con canela y ¡voilá!

Serendipity Frrrozen Chocolate Secret Recipe

One of my favorite movies is Serendipity (I know…cheesy!) with Kate Beckinsale and John Cusak that takes place in beautiful city of New York. It’s about a couple who falls in love and are separated after  and are convinced that destiny will join them once again.

In one of the scenes in this movie both are sharing a Frrrozen hot chocolate from restaurant  Serendipity 3. It is sooo good its in Oprah´s Favorite Things of 2006.Since Oprah made this even more famous, Serendipity 3 decided to give its recipe and she posted it on her page ​. I tried to follow it but to me it just wasn´t the same so i tweaked it to what i believe to be better than the one they gave Oprah (obviously they didn’t give her the real one). You may want to try to do both and compare to see which one you like more. Enjoy!

SERENDIPITYSerendipity 3 Frrrozen Chocolate in Las Vegas

INGREDIENTS

– 1/3 cup granulated sugar
– 1/3 cup nonfat dry milk
– 2 tablespoons cocoa powder Ghirardelli
– 1 tablespoon powdered Hershey hot chocolate
– 1 tablespoon cocoa powder Sharffen Berger (If you can not find this brand of cocoa, use 3 tablespoons Ghirardelli powder and 1 tablespoon powdered Hershey.)
– Pinch of salt
– 1 cup milk
– 3 cups ice

TOPPING
– Whipped cream to taste
– Semi sweet chocolate shavings

INSTRUCTIONS

1. Combine sugar, milk powder, cocoa, and salt in a small bowl.
2. Pour the milk into a blender. Add the dry mixture and ice.
3. Mix until all the ice crushed and drink is smooth. Pour into a large glass or two 16-ounce glasses.
4. Decorate your drink with whipped cream and shavings from a bar of semi-sweet chocolate (I use a potato peeler) and voila!

Una de mis películas favorita es Serendipity (yo se que cursi) con Kate Beckinsale y John Cusak situada en la bella cuidad de Nueva York. Trata de una pareja que se enamoran y se separan después de que se conocen y están convencidos que el destino los va a juntar cuando este desee.

En una de las escenas de esta pelicula están los 2 compartiendo un “Frrrozen Hot Chocolate¨ de un restaurante llamado Serendipity 3. Esta bebida Oprah lo puso en la lista de sus cosas favoritas en el 2006.

 

Como me fascina esta película cada vez que veo esta escena me daban ganas de lo que se veia como un chocolate delicioso y tuve la oportunidad de probarlo en Las Vegas. Gracias a Dios que abrieron uno en Las Vegas también! Este chocolate es un pedacito de cielo.

SERENDIPITY
Frrrozen Hot Chocolate de Serendipity 3 en Las Vegas

 Como Oprah le hizo tanta fama a este chocolate, el restaurante le dio la receta original y Oprah lo postio en su pagina web.Trate de seguir esta receta al pie de la letra y no me quedo igual como ellos dicen. Así que la modifique un poco y creo que me quedo mejor que la que le dieron a Oprah. Pueden tratar de hacer ambas y comparar a ver cual les gusta mas! 

INGREDIENTES

– 1/3 taza de azúcar granulada
– 1/3 taza de leche en polvo descremada
– 2 cucharadas de cacao en polvo Ghirardelli
– 1 cucharada de Hershey en polvo
– 1 cucharada de cacao en polvo Sharffen Berger (
Si no pueden encontrar esta marca de cacao, utilicen  3 cucharadas de Ghirardelli en polvo y 1 cucharada de Hershey en polvo.)
– pizca de sal
– 1 taza de leche
– 3 tazas de hielo

TOPPING
– crema batida al gusto
– virutas de chocolate semi dulce

INSTRUCCIONES

1. Combinar el azúcar, leche en polvo, cacaos, y la sal en un bowl pequeño.

2. Viertan la leche en una licuadora. Añadir la mezcla seca y el hielo.

3. Mezclen hasta machacar todo el hielo y la bebida es suave. Vertir en una copa grande o dos vasos de 16 onzas.

4. Decorar su bebida con crema batida y virutas de una barra de chocolate semi-dulce (yo use un pelador de papas) y listo!
