Spanish Tapas… Marinated Olives

I was reminiscing my trip to Spain, wishing i was back and eating delicious tapas and drinking wine or beer with every meal because ,for some reason, its cheaper than water. I called some friends up and decided to have a Tapas Night. Made some champagne sangria and tapas. Will post the recipe for the champagne sangria later. In the mean time, here is some of my favorite tapas, marinated olives.

I was obsessed with the olives when visiting Mercado San Miguel that i decided to open up a Tapas book i bought and found a recipe for marinated olives. So next time you are in a spanish mood make sure to include marinated olives in your tapas night. Olé!

olives

– 2 tbsp olive oil
– 1 tsp fennel seeds
– 1 tsp chilli flakes
– 2 tbsp chopped fresh mixed herbs
– 2 cloves garlic, chopped
– 2 tsp coriander seeds
– grated zest of ½ lemon
– 300g mixed olives

INSTRUCTIONS:

-Heat the oil in a small pan. Add the garlic, fennel seeds, coriander seeds, chilli flakes and lemon zest and cook for 1 minute.
– Stir in the herbs and olives, cover and leave to marinate for 24 hours. Serve at room temperature.
